Paleo brownies

After the Whole Life Challenge I swore I wasn’t going to eat sweet potatoes for a long, long time, but I had some left over in the cupboard and I was in the mood for something chocolatey the other day so I looked up a paleo brownie recipe.

This recipe uses grated sweet potato instead of steamed, boiled or roasted. I like it better like this, when the sweet potato is a soft mush, the brownies tend to come out like soft mush. When the potato is grated, the texture of the final product is much nicer.

Here’s what came out of the oven:

The recipe I followed is from Eat Drink Paleo.  I made the following changes: I used regular orange flesh sweet potato instead of white and I used a bit less honey although I could have probably used even more as the kids said it wasn’t sweet enough – they did eat it with ice cream though.  Here’s the recipe how I made it:

Ingredients
  • 4 cups grated sweet potato (I used a food processor so it was grated nice and fine)
  • 4 eggs
  • 1 cup melted coconut oil (not to the absolute brim)
  • 1 cup honey
  • 1/4 cup of maple syrup
  • 4 teaspoons vanilla extract
  • 1  cup raw cacao powder, sifted
  • 2 teaspoon baking powder
  • 2 teaspoon baking soda
  • 4 tablespoons coconut flour
Instructions
  1. Preheat oven to 185 °C (365 °F), make sure the oven is hot before you put in the brownies in.
  2. Combine grated sweet potato, eggs, vanilla, honey and coconut oil oil in a large mixing bowl and stir together until well incorporated. Then add cacao powder, baking powder and baking soda and stir. Finally add coconut flour. Avoid adding too much coconut flour as it will absorb too much moisture which will result in drier brownies.
  3. Once combined, pour the mixture into a baking tray lined with greased baking paper.
  4. Bake for 30-35 minutes. Cool for at least 30 minutes, the brownies are quite crumbly when hot but become more solid once cooled down and are actually the best on the next day.
  5. Serve with berries, ice cream, custard or yoghurt. Or all of the above :)

Like I said, the kids ate the brownies with ice cream and didn’t panic when I told them there were sweet potatoes in them. 10 points to Eat Drink Paleo!
